Before you start

- Grate the Carrots
- Pre-heat the oven 180°
- Chopp the <walnuts
- Line the Cake tin with parchment paper

Using a whisk attachment, cream together the butter, sugar and spice mix until smooth, pale and aerated.

Add the milk and vanilla paste.

Lightly beat the eggs, then gradually add them to the mixture.

In a separate bowl, combine the remaining dry ingredients. Sift them into the mixture and mix until just combined.
